I am using noscript and adblock but when I go to sites to test browser security and privacy I see some sites that can detect browser version and OS version even without using any scripts..

How can I use about:config, or some other method to prevent Firefox 3.6 from sending out any data to any website in regards to OS version and browser version?

That info is in the HTTP header. If you don't want a website to see that info, change your UserAgent. http://en.wikipedia.org/wiki/User_Agent
