Basically, I'd like Cortana to default search through Firefox browser using Google search engine.

I've applied EdgeDeflector & Cortana now uses Firefox browser by default but still uses Bing search engine.

Is there any way I can force Firefox to exclude Bing?

Cortana sends the browser a complete URL.

Once upon a time, Firefox would detect the special parameters in the Cortana URL, extract the query, and redirect it to your default search engine. I don't know if that feature was removed, or Microsoft changed the parameter so it is no longer detected.

For now, perhaps you need an add-on? This one popped up in a search, but I haven't tried it myself:

https://addons.mozilla.org/firefox/addon/bing-2-google/
