Can I un-install IE after installing Firefox?
I run Windows XP with IE 8.0. I got Firefox, and it worked better than IE right from the start. After a few months the Windows slowed to a crawl or locked up, using 100% of CPU and over 1 gb of memory. I got a second gb of memory, and the locking up stopped, but performance is still poor. When I start Firefox and start Task Manager a bunch of Internet Explorer tasks start up using tons of memory and CPU resources. Can I un-install IE and use just Firefox?

NO. IE is a part of Windows. Also, only IE can do Windows Updates.
This article was written before Windows 8 came about and Windows 7 was pretty new.
As FredMcD says, IE is tied into Windows. It is a good idea to have a second browser, anyway, in case something goes wrong with your Firefox.
A bit of housekeeping will help. Your System Details shown above show related plug-ins - TotalRecipeSearch and My Web Search You would be better off without both of these. Google for information and removal advice. Your Shockwave Flash is also well out of date.
