i use Office 365 for my email but, the toolbar shortcut icon to email a page link, etc. is defaulted to Microsoft Outlook. I don't use that version of email from Microsoft.

I need the default address to open up Office 365.

Can anyone help with an answer?

Firefox should use the default email application as set by your operating system. Therefor I suggest to make sure Office 365 is set as such. If it already is, set another email application (such as Thunderbird) as default, then set Office 365 back to it.

That said, this is when you referred to the stand-alone application, not the web version. I’m not very familiar with their (online) products.
