When I pull down 'tools, options, content' there are no options to enable or disable Java. My email client needs Java to operate and I can not make the necessary changes to correct it without options! Did I miss something?

Which one do you need Java or Javascript?

The option removed was Javascript, and with it disabled breakes some sites.

You can though try the settingsanity addon.

And java can always be disabled thru Firefox => Addons => Plugins
