When I try to add a new email address, the link to create a new email doesn't work. (Skip this and use my existing email link) I click and click on it and it does nothing. Can you please help me with this. Thanks

Try this way; 'Menu icon' > 'New Message' > 'Existing mail account'

OR 'Menu icon' > 'Options' > 'Account Settings' click on 'Account actions' select 'Add mail account'

it works but then when it trys to sign into gmail, it goes to a help menu and then says sign in at the top so thunderbird says unable to configure email. I've never seen this before. I've tried a few different emails. I have thunderbird on a different computer and these emails work just fine.

If gmail is set up using imap and Authentication method: oauth2 then the first time it will take you to a browser and ask you to sign in to verify it is you. Then a special sort of password/token is generated and stored.

Make sure your User Name is your full email address.

Yea, that's where it always takes me when I add a gmail email, but it won't let me get to that page to generate a token when I sign in. It automatically signs me out and brings me to a help page.
