Thunderbird
When I send an email to the recipients, they get actually a lot of mistakes like ������ instead ö, ä, ü, eu or ß?!
Could you support me, how I could adjust that. My language in Thunderbird is german.

But what is your font and are you trying to use legacy code-pages for German instead of Unicode?
Using a font that the recipient does not have is one of the common issues with anything but plain English ANSI characters. HTML uses a font family so if you specify a font that the recipient does not have the family will be used as a fallback and that can get very messy and ugly.
