I am running Windows10 with Thunderbird 38.7.0 and cannot change the date format to what it was in Win8. I have the format dd/mm/yyyy in W10 and it is showing as such in the calendar in bottom right of screen but does not appear to be picked up in Thunderbird. I have tried resetting in both T'bird and W10 but to no avail.

I have just solved the problem by getting out of T'bird, resetting the format in W10 several times and then opening T'bird again. While it has fixed the problem, it has not solved the mystery of how it happened in the first place as the format was correct (to my settings) yesterday and just came up incorrect this morning, while the W10 display was still OK.
