Why is the FROM email address changing when I reply to people?

I have multiple email addresses. I save and move all emails to one email address. When I reply, the "FROM" address always defaults to that email address in which I am saving the emails. So for example, if someone emails me at email1@email.com and I save that email in email2@email.com, then later respond to that email, it uses email2@email.com as the "FROM" email.

Shouldn't it reply using the ORIGINAL email address?

No That is what the identities part of the account setup is for, to specify the identities to use when replying. I suggest you have a look at this topic https://support.mozilla.org/en-US/questions/1239772

You can define the replying identity for each account with this add-on:

Note the version for TB 60 stated in the latest review (change the downloaded zip extension to xpi to install).

The link I gave you provided significant detail on how to configure your account to work correctly. Instead of that you want an add-on. How about just set up your accounts the correct way.

Set up identities or use an add-on that might or might not work after the next update. I know which I would be using.

To expand this topic somewhat. Outlook/Hotmail/MSN ignore what you set in your mail client and replace it with the information they have for your primary email address.

There are other providers that will also do that. So no one here can offer a definitive answer because there are two things involved and only you know who provides the mail service and if they actually comply with the standards. the Microsoft subsidiary clearly does not.
