My 'Insert Image' works fine when placing a jpg Image in the Body of the E-Mail (not as an attachment) - but will not work when the file is a pdf or a docx image?

Sorry for the issue you are having. There a pro and con to the question you have asked. One hand if you can have the pdf or do file in the body of the email, the receiving mail client may not be able to read it.

For now, T-Bird has only the option to attach the files. You will notice with attaching images, you are able to preview them as most mail clients are able to do this.

In future this will be possible :-)
