We use Firefox on a administrative workstation which must not have general access to the Internet. Which firewall exceptions do I need to define (IP addresses, ports), so that Firefox can automatically download updates?

The update URL is generated via the app.update.url pref that you can inspect on the about:config page.

If you want to see the exact URL then install the Live Http Headers extension and open its window. If you open "Help > About" then this will trigger an update check to retrieve an update.xml file and you should see the full URL in the LHH capture window.
