I have my thunderbird account synced with my gmail but when I sign out of gmail, thunderbird email is still open. Is there somewhere on the toolbar that I can log out of my thunderbird account?

Simply closing the program does the job. It is not a web site with cookies

When I exit the program and re-open it, it still shows my emails that people can read. I don't want that. I have been through all the settings and I don't see a way to entirely "logout" Thanks.

If they open my documents they will see your documents and in my pictures they will see your pictures. In your mail program they will see your mail in in your browser history they will see the last however many sites you visited and when.

The start menu will give a list of all the files you have recently opened along with your frequent programs.

So tackle the problem for what it is. Access to your device.
