Hi, I am using Firefox ESR on Kali Linux. Whenever I hover on a clickable link, the background color matches with the text making it almost impossible to read (Check picture).

I have tried changing color combinations in preferences and setting some other themes. Any suggestions to fix this?

I assume that this is a consequence of the dark theme you use in your Linux distribution, but the text color isn't adjusted. You can test that by using a lighter GTK3 Linux theme.
