You must be composing in html format, not plain text. Make the Formatting Bar visible under View/Toolbars (press Alt if the Menu Bar is hidden), and apply the text color icon.

Tried that still only gives me to use the background color My toolbars Menu bar Composition bar Formatting bar Status bar all ticked Customise yes using HMTL format please help

The colour selector has two squares in it,, the top left is the font colour and the bottom fight is the background.
