Is there any way we can approve a generic domain as OK, instead of having to authorise each unique email reply, e.g. complaints@domain.com, service@domain.com, no-reply@domain.com etc just state tha anything from domain.com is OK. I accept it's not ultra secure but for incoming emails with html content it has to be better than having to approve each email

General info on remote content: https://support.mozilla.org/en-US/kb/remote-content-in-messages

I'm not sure why you are needing to approve each email because I'm sure each and every email is not a competely different email address from the same domain. But I suppose that depends upon whether you are only selecting the option to just show remote content in that particular email, which is the first option in the 'Options' drop down list OR whether you are selecting to allow for the email address, which is last in the list.

Once you have made an exception for an email address, you should not need to repeat it. This is where you can see what is stored and add exceptions.

Please be aware that remote content source can vary and email addresses can be spoofed.

Menu app icon > Options/Preferences > Privacy & Security Under 'Privacy' 'Mail Content' section click on 'Exceptions' Add each email address and/or add website which allows remote content on that website and select 'Allow'.
