I always have several sessions open and minimized. If I click on the Firefox icon to open a new one, it does, but it also opens ALL of the other minimized sessions. Very annoying.

Have you considered just opening a new window from an existing Firefox window, instead of using the Firefox shortcut?? See the thing is that Firefox runs all windows in the same "session", not separate sessions as IE does. { Ctrl + N } works wonders to open a new window, without restoring all the other windows.
