I have two email accounts, one for school and one Gmail. I forward all of the school emails to my Gmail account, however, I still want to be able to send mail using my school email address.

Since there is no email on the school email account, I have no need to set up a POP/IMAP account. Is it possible to configure Thunderbird so that I can send mail from either email address, yet not have the incoming mail server setup? I do not want to see the school email folders in the left column of the folder tree.

Add your school account to your gmail account on the gmail website under Settings/Accounts and Import, as 'Send mail as:', then add the school account to your TB gmail account as a new identity (Tools/Account Settings, select the gmail account in the left pane, Manage Identities in the right pane) and set the gmail smtp server as the Outgoing Server. When sending a message, click the From: drop-down at the right end to select the account or identity for the sending address.
