I have no Idea where it came from and I don't have the knowledge to do developement work. How do I ensure that I only have the stable version on my computer?

I would not worry about this. I'm also on a release channel and can see the same thing as you.
A bug has been reported to see what the bug fixers say. https://bugzilla.mozilla.org/show_bug.cgi?id=1275168
The person who enabled this message likely included other channels like Release by mistake.

So, even though it says I am on the NIGHTLY updates, I AM NOT???? I went from version 38 to version 45 in ONE UPDATE!!!
Yes and the last general release was version 38. The newest general release is version 45.
