Since a couple of days the language of Thunderbird has suddenly changed from Dutch in to English. How can I change the language back to Dutch without loosing my (archived) mails?

Install the Dutch version. Your data is separate from the program so it should be OK. Backups are always a good idea even if not doing software changes. This tells you how to backup your profile. https://support.mozilla.org/en-US/kb/profiles-where-thunderbird-stores-user-data
