Can Extension Files be Copy/Pasted from One Installation to Another?
My company allows me to update/install FF, but not to access the extensions site (recent change), including in-browser through the Options menu. Nor can I uninstall the latest version, which is useless to me without those extension. Is it possible to copy/paste the extension files from one installation of FF to another and have them still function correctly? If so, where do I find those files?

You could download the extension at home and install it from file.

Can of worms now-a-days. Depends upon each particular extension, what it does, and how it saves user data; and if that user data is saved in a unique folder for the particular extension. Was bad as of Firefox 57 Quantum, and has gotten worse as time has progressed since then.
TyDraniu has the answer for your best way to proceed, IMO. And when you want to install an extension saved to like a USB Flash Stick, just drag the .xpi file into the Firefox browser and it should self install (assuming it still works that way).
If your company has done this properly then they have used GPO rules or policies.json to block installing extensions. If they only block access to the Add-ons website then this isn't a real block, but merely makes it more effort.
You can also look at the portable Firefox version that comes with its own profile.
