I accidentally upgraded from Thunderbird 68 with Enigmail to Thunderbird 78.7.1.

I use Inline-PGP because a recipient had problems reading PGP/MIME, requiring manual decrypt. Now, only PGP/MIME is supported.

How can I add back Inline-PGP support?

I found a related bug in bugzilla: https://bugzilla.mozilla.org/show_bug.cgi?id=1602481 It's marked as low priority.

There are other problems with PGP support compared to Enigmail, like PGP key password protection, encrypted subject (now fixable in the config editor), per-recipient automatic encryption rules, and popup dialog confirmation box when sending encrypted or unencrypted mail. Those, I can deal with.

Not having Inline-PGP is a blocking issue for me. I don't have a recent profile backup and downgrading Thunderbird is not supported.

You found the bug. That is the canonical information source. If you with to discuss E2EE in general terms, there is a mailing list for that that offer some support for E2EE. https://thunderbird.topicbox.com/groups/e2ee

I suggest you inquire there as to your options.
