I am moving to a new computer and followed the instructions. Opened up thunderbird on new computer and could only find address list and not e-mail accounts.

I followed the instructions religiously but cannot find the e-mail accounts or messages. Easily found my address book with contact's e-mail addresses. Is there something to do with the profile? I have three e-mail accounts set up on the old computer version of Thunderbird. Thank you

I suggest you check what was copied from your old computer to the device you used to transfer the data. My observation is that for reason I do not fully understand some people manage to only copy the "root" folder of their profile when they make the copy. so the copy has none of the sub folder that normally occur in a profile such a mail, imapmail and calendar-data among them. Others get it all first time.

I do wonder if one lot use drag and drop and the other use the menu copy and paste. But I am really lost as to why some have no issue and others have lots of problems.

All I can suggest are some additional steps.

Before you copy anything right click the folder in windows file explorer and select properties. In the general tab take note of the Size and the number of files.

Once you have your copy. Again select the folder on your usb drive and again check the files and folder count and size to make sure you have all the files and the size looks good.

When you copy the data into the new location again repeat the check to make sure the copy has copied everything.

One thing to keep in mind is Widows returns control to you long before the copy is actually complete. So it may simply be you been to drink a lot of coffee between each step to make sure all disk activity on the drive is complete.
