When sending one email to multiple addresses I always had the choice of 'To', 'Cc', or 'Bcc', and after each address was entered another line would open to put another address. Suddenly this was lost and all I get is 'To" and I can't open another line for more addresses, and I can't change the 'To' to 'Bcc'. With this situation I can only send emails to one recipient at a time. How can I correct this situation?

Me too, sort of: In the heading of a new empty draft, I see "From" and "Reply-To" fields both containing my email address, "To" and "Subject" fields both empty, and to the right of the "From" field are "Cc" and "Bcc". When I click "Cc" or "Bcc", a corresponding empty field appears and the clicked text disappears. So I can send to three -- but only three -- addressees: one each To, Cc, and Bcc. This behavior is a serious downgrade.

You have described the same problem that I have. Let's hope somebody comes up with a solution.
