I would like to restrict collection of email addresses
I have tried the solution in tools/options/composition/addressing but this seems to refer to sending emails. I would like to stop the collection of addresses I already have in some portion of my address book(s) and, ideally, be able to select which addresses I do save.

Thunderbird does not collect email addresses from incoming messages. So I'm not sure what your question is about.

Do you mean the addition of senders' addresses for the purpose of allowing remote images?
