When I set up tab groups, do I ALWAYS have to close by going into Firefox and pressing quit? Otherwise I loose my tab groups.

I have been experimenting with Tab Groups and typically when I quit Firefox I go to the red circle at the top left hand side of my screen and it closes. However, when I do this I loose my Tab Groups. I need to know how do I quit Firefox and NOT loose my Tab Groups?

If you click that button then you only close the current window, but the Firefox application is still running.
If you have done that then reopen that closed window with the App tabs and Tab Groups via "History > Recently Closed Windows" and use Firefox > Quit to close the Firefox application with all open windows.
That is the only way to preserve App Tabs and Tab Groups on Mac.
