I don't have access to the email listed in preferences (under sync next to manage account and sign out) but when I click manage account it shows an entirely different email with no secondary email listed at all.
What happens if I click sign out if I don't have access to the email where I can click sign out of and the email in the manage email account is a different one entirely. What email would I be signing out of and which email is synced with all my tabs and history? I don't want to lose access to all the saved options and sites and everything attached to my desktop browser but I don't have access to the first email listed.

I don't think that should happen -- the email address shown above Manage Account and the email address in Manage Account should be the same.
I don't know what the fix is, but I suggest making a backup of your local data before signing out. This article has the steps: Back up and restore information in Firefox profiles.
Also, when disconnecting, do NOT delete data if Firefox offers you that option.
