There is no option to copy text in the share menu. This means that if a website has a button that triggers the share menu and you click it, you have to find a workaround to grab the text, like sending an SMS to yourself. You can test this out on the YouTube website.

I find that if I long-press the text in the page that I want to share, I get the option to adjust how much of the text I want to copy, and then I can copy it to the clipboard. Is that not what you want to do?
