I am using Dream Aquarium screen saver. Whenever the screensaver comes on, and I click it off by the mouse, FF8.0.1 opens up full screen from being minimized to the tray.

What's That Preference? add-on - Quickly decode about:config entries - After installation, go inside about:config, right-click any preference, enable (tick) MozillaZine Results to Panel and again right-click a pref and choose MozillaZine Reference to begin with.

Does this happen when another screensaver is set? You may want to check this behavior with a built-in screensaver that came with the OS.
