How do I remove the "email image..." option from the context menu? There are some technical solutions people are posting that involve a lot of editing and I don't really understand them at all.

There are also some links to extensions that have been since removed.

There is no built-in way to hide that item. It sounds like you have heard about the community-developed community to use custom style rules to hide it. Perhaps we can simplify the explanation about how to do that if you're interested in trying it.

Do you mean that pages on the web linked to extensions on the Mozilla Add-ons site that are no longer available? If the articles were from 2017 or earlier, it's possible they were legacy extension that are not compatible with Firefox 57+. Those were removed some time ago.
