Firefox either thinks I am Italian, or that it is in Italy. Whenever I fill out a form in English it wants to correct it to Italalian. If I right click on a word underlined in red it offers the Italian dictionary and no others.

how do I correct Firefox to use the English dictionary and not as at present - the Italian? I have never consciously set the language as Italian, But as I am typing this every word is underlined in red by Firefox, and when I right click it wants to offer Italian words.

Try installing an English dictionary, for more details see How do I use the Firefox spell checker?.

You can get the British English dictionary from https://addons.mozilla.org/en-US/firefox/addon/3366/ and the US English dictionary from https://addons.mozilla.org/en-US/firefox/addon/3497/
