When you go to the spelling setup page that Onno refers to make sure a dictionary is selected.

You can setup Thunderbird to check spelling as you type: Menu location: Tools > Options > Composition > Spelling

Alternatively, you can tell Thunderbird to check spelling before sending with the same menu location.

You can check spelling on the fly by pressing Ctrl+Shift+P in the Compose window.
