Changing text encoding to Western

I am in a email distribution group. My reply emails to that group cause mysterious "AAAA"s periodically in my emails. The issue was fixed previously by changing my text encoding to "Western". Now with Thunderbird 91, I don't know how to do that. I saw other threads that directed the user to enable an add-on that opened that text encoding menu under the view tab, but when I do that, all of the options are grayed out (unavailable).

How can I change my text encoding to Western in Thunderbird 91?

The add-on's options are greyed out as of TB 91.4 due to the removal of certain functions:

Currently, the only option is to use the (fixed) View/Repair Text Encoding menu.

The add-on was able to correct the encoding in received messages, but you say the issue was with your replies. Unwanted characters in sent mail has been linked in the past to certain smtp servers, especially ones based on Yahoo mail (AOL, Rogers, AT&T, Frontier etc.).
