Sometimes messages are sent with the wrong email address in the From field

I have multiple email addresses from two providers (my own mail server and gmail). One of the gmail accounts is for my employer, all of the other accounts are personal.

When I compose a new email from any of my personal accounts the address in From field looks correct, but it is not always being used. When the wrong From address is use it is always the gmail account I use for my job. This means that the responses to my personal emails come to my employer account.

How can I fix this?

Google has the (unfortunate) behavior of using your "default" (defined by them) address as the 'from' address.
