I have tried exporting the folders to an external hard drive, using the importexporttools app, but when i try to import the folders to my new Thunderbird using the import menu in Events and Tasks, the file options are for calendar files (ICS and CSV), and no options for all files.

BTW, if you use ImportExportTools to export your data, you should also use it to import, and not the options under Tools|Options…

It does have an Import/Export profile option, but I'm not sure what benefit this has over just doing a regular file copy with your OS's usual tools.

I'd say you should just copy the entire profile. That gives you everything; email messages, account settings, address books, extensions, customizations, filters etc etc.
