When in my gmail account and click on my icon the drop down list does not contain the 'sign out' option. Any ideas why this happens and the cure?

I haven't searched around for discussion of this, but had a possibly premature thought...

I wonder whether this might be related to the way you sign in to Google. Maybe if you sign in indirectly by connecting Google with a school or office sign-in, that overrides the normal Google layout. But if you sign in directly on Google using a personal account, that wouldn't be relevant.
