using v 3.6.10

I just changed the history setting to the default of 180 days. It was set at 5 days. Can I get to history from before the 5 days, or is it gone forever?

If you changed the setting in Tools > Options > Privacy then your history should still be there unless you deleted it. That setting only affects what is kept in memory and not what is stored on disk in places.sqlite.

See:

I did not use the Tools>Options>Privacy to change the history expiration. I used the about:config and changed the browser.history_expire_days and browser.history_expire_days.mirror. The Tools>Options>Privacy was 90 days when I looked at it after receiving your answer. When I look at Show All History in the History dropdown, I only get 5 days worth.
