When sending an e-mail I sometimes i get a message <saving e-mail to folder sent>. This can take a very long time and sometimes a time-out occurs. If I click cancel the message is <mail has been sent, but is not saved tot folder>. My e-mail server provider says this is a Thunderbird issue

This happens because of network issues. Thunderbird sends the message to email provider's server and it times out. That could be general network issues or an overloaded server at email host. You will probably see this on occasion, but not all the time. I also encounter this message on occasion with my email host. It is not Thunderbird.

The provider says that they recognise this as a Thunderbird issue and that there are no problems at their side.

Well, others aren't having the problem. And no email host tech support wants to even consider problems on their side. And neither Thunderbird, nor the email host has authority on the network between the two. Yo u may want to create a log to see whatever is happening.
