I cannot drag icons from the add-on bar when customizing.

I tried to remove the screengrab icon from the add-on bar to move it back to the navigation bar. Your article says to drag the icons from the add-on bar just as you would any other. These icons seem to remain active during customization, unlike those on other toolbars. I cannot drag any of the add-on bar icons. This has been a problem already, prior to version 5. You never could do that in Firefox with status-bar and it is very limited as the add-ons bar. Check the options in your "screen grab" extension for placing a button on toolbars or status bar.

You can make Firefox 4.0.1 and Firefox 5.0 look like Firefox 3.6.17, see numbered items 1-10 in the following topic Fix Firefox 4.0 toolbar user interface, problems (Make Firefox 4.0 look like 3.6)

Looks like "Organize Status Bar" would probably work, users are reporting mixed results.

see the reviews for "Organize Status Bar" to pick up one that works with Firefox 5.

I had no luck with either of these. Organize Status Bar would not install for me. So I have found my own solution. I installed a different extension that functions as I prefer :) Thanks for your help!

It is Pearl Crescent Page Saver Basic. It saves screenshots in the same manner, and its icon goes directly into the Navigation Bar.
