When you enable "Resist Fingerprinting" then your user agent is changed to 78.0 ESR. You can't override this and I don't know if an extension can do this.

So which one is better?. Should I use "Resist Fingerprinting" or user agent instead?

What user agent would you prefer.

It is up to you to decide what you find more important. Changing the user agent is only one of the many changes that are made and RFP testing websites usually show that you have a unique fingerprint.
