I have noticed that it should be possible to have a group set up of email addresses, but when sending to all members only the recipients address is seen by the person receiving the email, But I am not sure how to do it - can anyone suggest a method?

No matter which of these options you use, the email addresses of everyone on the mailing list will be visible to anyone who receives the message, even if all that you see in the "To" field is the name of the mailing list.
