Thunderbird
I just installed Thunderbird 91.0 on a new Mac laptop and successfully connected to my office email (managed through Google G-mail), but only 2,000 emails will load into Thunderbird's INBOX or SENT MAIL. (and yes, I can see all the "sub-folders"/filter tags I created in Google) Thunderbird's Account Settings / Synchronization & Storage is set to "Synchronize all messages locally regardless of age" yet each email folder is only showing 2,000 emails. I have over 200,000 emails in this account online that want loaded into Thunderbird. How can this task be accomplished?

Gmail has bandwidth limits for POP (1250MB/day) and IMAP (2500mb/day). Is it possible you've reached the limit with 2000 x no. of folders?
It's possible, but not likely that the INBOX and SENT MAIL would both be limited to exactly 2,000 emails each upon the install/connection of Thunderbird to Gmail. 48 Hours have passed since the install and only new mail is coming in - the total email count remains at or just below 2,000 in each folder. Online, there are over 200,000 emails. Why is Thunderbird limited to this? When I ran a test on a PC with a different account, more than 30,000 emails loaded into Thunderbird within just a few hours. On this MacBook Pro however, this version of Thunderbird has this ridiculous limit.
