Disappearing Inbox folder

I was working on figuring out an imap timeout problem (previous forum question) when I accidentally deleted the Inbox folder. No problem, I thought, cuze imap protocol will recreate that folder when thunderbird restarts. Problem is, it did, but after a period of time (10-15 mins) the Inbox and Trash (which I didn't delete) disappear. Nothing I do seems to recreate them. Message Synchronizing is on and Inbox & Trash are checked. Doesn't matter if unread emails are in there. When I restart thunderbird Inbox and Trash are back but then disappear.

Details: Windows 10 Home 22H2 Thunderbird 128.3.1esr

Oh, I forgot to mention, I even tried Repair Folder but that didn't do anything. Didn't bring back the folders either - always have to restart thunderbird to get those back.

Anyone have any ideas here? Or things I can try? Am I the only one who has had this happen to them? (Wouldn't be the first time I've broken software in new and unique ways).

This is pretty annoying as we have to restart thunderbird whenever the inbox goes away otherwise we'll never see any new email.

We did notice something 'interesting' - when we aren't connected to the internet the Inbox folder doesn't disappear. Soon as we connect it takes about 15 mins and then it goes away.
