I have AOL mobile app on my Android mobile phone, I have 3 accounts and when I try to attach any attachments to my emails I get no response when I tap my "attach" icon. My email on my phone has worked fine for years until I installed Thunderbird, which I now bitterly regret

Mobile phone mail programs do not interact with Thunderbird. Both your mobile phone mail program and Thunderbird independently communicate with your mail server (at AOL). Neither program should be able to change how features work in the other program. Thank goodness!

err.... Do you have this same issue when Thunderbird is not running on your PC. Say with the PC turned OFF

If you do then the issue is most unequivocally not Thunderbird, or anything on your PC. But it might be another app on your phone.
