On the latest version of Thunderbird portable ( 60.2.1) the activity bar at the bottom is a dark gray color whereas the previous versions were lighter gray. Consequently, I cannot read the activity bar on the bottom ( loading messages, ect.) because my computer background screen color is black. Is there a way to change that bottom bar on Thunderbird so that I can read it on my computer ( without me changing my computer screen background color)?

I would rather not alter my current desktop settings. I was looking for a way from within Thunderbird to change this. thanks

You can probably change the status bar colours with a userChrome.css file such as described here. Or, use a full theme that overrides the OS colours.
