Removing default US dictionary (or change default)

Hello I have added a English-Greek spelling dictionary in thunderbird and this is what I want to use. But thunderbird is defaulting to the English only dictionary that was installed with it, so how can I remove this one to force thunderbird to default in my dictionary of choice?

Of if I can set my English-Greek one as default will do as well, I don't mind as long as it work.

In Tools/Options/Composition/Spelling, select the dictionary you wish to be the default in the Language: drop-down. See if that setting persists when you compose messages.
