With every updates I have to redo all my preferences, bookmarks and pinned sites. Rather annoying and I'd like to not have to do that. I have disabled updates but FF seems to be able to override that...

This shouldn't happen. You bookmarks, settings etc should persist though an update.

I suggest uninstalling and then reinstalling Firefox.

You can also use Firefox Sync to synchronise your bookmarks, history etc to another device. See here for more:

How do I set up Sync on my computer?

I hope that helps.
