In settings, the customize search engine function doesn't appear to offer any removal option or ordering option. Effectively when I search, the browser auto-uses Yahoo. What could be going on?

Tapping on an item in the Settings should allow you to remove or set as default. https://support.mozilla.org/en-US/kb/manage-my-default-search-engines-firefox-android
