When yo go to "preferences" "composition" and "language" to change the default language, you find you can. Even when you download another dictionary - I want British English- the only dictionary that appears in the dropdown menu is US English. How do I solve this problem?

Make sure the British dictionary is installed. https://addons.thunderbird.net/En-us/thunderbird/language-tools/

It should be listed in the Add-ons Manager underneath 'Dictionaries'.
