I'm using Thunderbird V 78.1.1. If I reply to an encrypted email, my reply is automatically set up for encryption. However, if I use Write to create a new email to someone who is listed in Tools | OpenPGP Key Manager, I have to set up the encryption manually. Prior to V 78, this happened automatically.

Can I configure Thunderbird to automatically encrypt any email to anyone for whom I have encryption information ? Also, to omit my signature, since I don't need it once two-way encryption is established ?

There is no open PGP support in Thunderbird 78-78.1.x open PGP should be available in V78.2

My understanding of encryption is you can set ti to encrypt or not encrypt. But not to opportunistically encrypt when it can. What I have read indicate that the powers that be in the openPGP world are against that on the grounds that encryption can not be relied update unless it is strictly on or off.

There are plans to introduce an optional encryption mode for Thunderbird OpenPGP, but we're not there yet. https://thunderbird.topicbox.com/groups/e2ee/Tcb4b3decdb7e66ce/require-encryption-vs-optional-encryption
