In the new Thunderbird design in 31.3.0 (Linux Mint 17.1 rebecca based on Ubuntu 14.04 trusty), there's no longer the menu-bar in the compose-window (see also screenshot) and no other controls to open a menu, like in the main menu. My specific question is now: How can I request a Delivery Status Notification (DSN), which was a menu item in the Options-Menu.

In Windows the alt key or F10 will reveal hidden menu bars. Does Linux have anything like that? What about right clicking various places on that window. Do you get a dialog to turn the menu bar back on?

Not the Alt either the F10 key shows the menu. Rightclicking does not show a menu either (beside the icons just Composition toolbar and Customize).

There has to be some sequence for display of hidden menu bars in Linux. Maybe another Linux user will come along with the a hint.
